Some leftover recipes to keep in mind Carroll County Online

This week s recipes are from www. Neither of these recipes should be too repetitive from Thanksgiving dinner and should stand up on their own merit. Heat oil in a large heavy skillet over medium high heat. Add onions celery bell peppers and garlic. Cook minutes or until tender stirring frequently. Add beans cumin salt and hot pepper sauce mix well. Bring to a boil. Reduce heat to medium low cover with lid. Stir in turkey cook uncovered for minutes or until heated through stirring occasionally. Add parsley to rice mix lightly. Spoon rice onto serving platter and top with bean mixture. Add cubed turkey and cup water stirring to loosen all browned bits from the bottom of the skillet. Meanwhile in a quart saucepan place teaspoon salt and cups milk then gradually whisk in cornmeal until smooth. Heat to boiling over medium high heat whisking. Cook while stirring minutes or until thick. Stir in parmesan cheese. Serve polenta with turkey and mushroom mixture! . Garnish each plate with a sprig of fresh tarragon leaves.
